Sweet Saturday, Nut Bread

     The hustle and bustle of the season is in full swing. People scurrying around, shopping, visiting, cooking, getting everything ready for the big day on the 25th. This recipe is another gifted to me by a co worker. I have a sweet tooth but in small amounts, I much prefer things more savoury than sweet. This is perfect; with coffee or tea in the morning or when ever you need a quick snack.

Nut Bread
Ingredients
1 3/4 cups flour
4 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon nutmeg
2/3 cup of sugar
1 cup crushed or chopped nuts-pecans, walnuts, hazelnuts, pistachios etc etc etc
1 egg, lightly beaten
1 teaspoon vanilla
1 cup milk

Directions
Preheat oven to 325 degrees.
In a medium bowl whisk or sift all dry ingredients, except nuts. This is to distribute the baking powder and spices evenly through the mix.
In a small bowl whisk egg, milk and vanilla together.
Combine wet and dry ingredients and mix.
Add nuts, mix again until well combined.
Pour into a greased loaf pan and bake 60 to 70 minutes until tooth pick comes out clean.

     The reason I like this recipe is the variety you can create with it. You can change the nuts to what ever you like. Substitute the sugar for 1/2 cup of honey, reduce the milk to 3/4 cup and bake at 300 and you have a honey nut bread. Throw in some cocoa for chocolate nut bread, add peanut butter...  Split the nuts half and half with dried fruit, the possibilities are endless.

    It is always good to have some simple recipes like this you can personalize to your own tastes. With so many holiday recipes an assault on the taste buds, it's nice to have something to cleanse the palette. Quick to prepare, no muss, no fuss. Just what you need during this hectic season.
