Peanut butter marshmallow squares

     I have no idea who's recipe this is, or when it started making it's appearance at family functions. I always have it at my aunt Barb's so she gets the credit. This is one of those funny things that even when there are lots of home made pies, cheesecakes and cookies, these squares disappear first.

      It is one of those deceptively simple recipes, only four ingredients and I can never get it to turn out like Barb's. I have no idea why. I may actually have the recipe wrong, I suspect the amount of butter is too high, but this is what I wrote down so.....

     That's Barb's place on the lake, she hosts an annual get together in the summer. It looks so calm and peaceful in that picture, just wait until the Fisher clan arrives.

Peanut Butter Marshmallow Squares
Ingredients
1 cup butter or margarine
¼ cup peanut butter
1 package butterscotch chips
1 package regular or mini marshmallows
Directions
In the top of a double boiler, combine butter and butterscotch chips. Heat, stirring occasionally until butterscotch chips are melted and mixture is smooth. Remove from heat, add peanut butter and stir until well mixed. In a large bowl, mix together marshmallows and warm butterscotch mixture. Pour into a greased 8x8 or 8 x11 in pan. Refrigerate until cool.

     Butterscotch doesn't melt like chocolate, it takes a lot longer and is harder to smooth out so be patient. I use a double boiler so I don't scorch it. My microwave hates me so I don't use it either, but you can melt it  on top of the stove or in the microwave if you prefer.

     I have a feeling the amount of butter is only a half cup, mine has a tendency to separate, with the marshmallows floating to the top instead of staying all together.

     I haven't tried this but yet I think it would be good with almond or hazelnut butter too.

     Even though Ferd loves these, I don't make this recipe a lot. They are kind of addictive and disappear  fast around here. Who can afford all those calories all the time? LOL

     So here's a recipe that proves it doesn't have to be complicated, to be complicated. Good luck and enjoy.

  1. Mom and Colby make these together! He loves them -- he's probably the one eating them all at family functions. LOL. Anyway, recipe they use as follows:

    1 pkg of rainbow mini marshmallows
    1 cup of unsweetened coconut
    1/2 cup chopped nuts (they use pecans)
    yes - 1/2 cup butter
    1 cup smooth peanut butter
    2 6 oz. bags of butterscotch chips

    melt butter, pb, b/s chips in microwave on high (I guess 6 year olds and double boilers probably don't do well together.) for one minute. Stir. Micro again until melted - but not too hot. Let cool about 1 minute. In separate large bowl mix marshmallows, coconut and nuts. Add the melted mix to marshmallow mix and combine well. Press into greased 9 x 13 pan and refrigerate before cutting.

    Theirs always turns out really good -- no separation....but perhaps a little short on some marshmallows or b/s chips if we don't keep little sister back.
